Valentine's Day Dinner

We are celebrating as a family and will be serving Chicken Cordon Bleu with honey mustard sauce.

You need:

4 boneless, skinless chicken breasts- pound to 1/4 thickness
8 thin slices deli ham
4 slices Swiss cheese
2 Tbsp flour
1 egg, beaten
1 cup panko bread crumbs
salt and pepper to taste
juice from 1/2 lemon
2 Tbsp Dijon mustard
1 Tbsp honey
1 Tbsp olive oil honey

Preheat oven to 450. Season the chicken all over with salt and pepper. Lay two slices of ham and one slice of cheese across each breast, then roll width wise until you have a tight, jellyroll like package.

Place flour, egg, and bread crumbs in separate bowls. Take one roll up at a time and dip it first in the flour, then egg, and finally bread crumbs. Arrange the chicken on a baking sheet and bake for 15-20 minutes until the chicken is firm to touch and bread crumbs are crunchy.

While chicken bakes, stir together the lemon juice, mustard, honey, and mayo to make a smooth sauce. Drizzle over the top of the chicken.

Serve with salad and veggies.

We are also going to make chocolate covered strawberries! It wouldn't be Valentine's Day without them!!
